The Biterrois, located around Béziers, is characterized by a warm, dry Mediterranean climate, ideally tempered by maritime influences. This terroir, historically linked to the production of volume wines, is now experiencing a true rise in quality.

The varied soils (alluvium, limestone, rolled pebbles) favor accessible, fruity, and generous wines. Often dominated by Grenache and Syrah, supported by Carignan, these wines are crafted by winemakers increasingly focused on organic and natural wine.
